Litti chokha / लिट्टी चोखा (favorite dish of Bihar)
Litti chokha is the national dish of Bihar state in which litti and chokha - two different dishes are said to be eaten together. It is particularly popular in Bihar, Jharkhand and Uttar Pradesh. Although it is eaten with great love and taste from many corners of the country .
Litti looks like baati, but veryIs the difference. It is made by filling sattu in flour. And it is prepared by mixing brinjal, potato and tomato and it is eaten with love with litti. Ingredients to make Litti:
* 2 cups flour,
* 1/2 teaspoon oil,
* 1/2 teaspoon celery,
* 2 tablespoons ghee.
Method of Litti:
Sieve the flour and take it out in the pot, add ghee and light salt to the flour and mix it well. Knead a soft dough with the help of lukewarm water. Cover the dough and keep it (for half an hour). Dough is ready to make litti. Ingredients to mix in Sattu:
* 1 cup roasted gram (without peeling) or Sattu,
* 4 - 5 garlic (grated),
* 1 piece ginger (grated),
*1 onion finely chopped (not required),
* 2 - 3 green chillies (finely chopped),
* 1/2 cup coriander (finely chopped),
* 1 tablespoon celery,
* 1 tbsp lemon juice ,
* 1 teaspoon oil
* 2 filled red chili pickle seasoning, and
* salt as per taste.
Prepare a sabzi filled with litti. Wash the ginger, peel it and cut it into fine pieces or grate it. Finely chop green chili and green coriander. Take out the sattu in a vessel. Add ginger, green chillies, coriander, lemon juice, salt, black salt, cumin, mustard oil and pickle seasoning to it, if the sattu is completely mixed, after that add 1-2 teaspoons of oil and water and add it Mix in such a way that it becomes completely brown. Now the sattu is ready .
how to make litti: Make medium sized dough balls from the dough. Roll the dough with the help of fingers 2 to 3 inches in diameter.Enlarge, now make a bowl, put one to one and a half teaspoon of sattu on it and lift it from all sides and close it and make it round. Flatten the sphere with the palm, the litti is ready to roast. ...... Now burn the wood and coal and make it completely fire and put it in the ground or a big fire pot, put the loaded lumps on it and bake it till it turns brown .
Note: Litti is traditionally baked on fire (of goats).
How to make Chokha: Wash and fry brinjals, potatoes and tomatoes. Remove the skin when it cools down. Now keep it in a bowl and mash it with a spoon. Add chopped onion, chilli, coriander leaves, lemon, pickle, salt and oil and mix well. Take the famous chokha of Bihar is ready.
If you like garlic and ginger, then add 5-6 garlic cloves and a small piece of ginger.
